but the .sql has still some CHARSET utf8
I tried to put in my.cnf [mysqldump] default_character_set=latin1 - same result
do you have some è charset ? 
it is in .doc in fgal or tracker

i tweak my my.cnf and do mysqldump database table
and how do you recognize it is double encoding - when I hexdump the file I see C3a8 isntead of e8 for  è .. C3a8 is supose to be A with umload and ..
another solution is to use iconv
tweak my.cnf?
change default-charset to latin1
GOOD idea - will try iconv
iconv --from=latin1 --to=utf8
default-charset for [mysql] or [mysqldump]

i use it for doc.two on wikipage, works
sylvieg: be careful, when you edit your file with vi, vi try to convert the file in your LANG to show you the best look of your file, but when you save it, vi reconvert it in the original charset
to be sure, just use ESC :e ++enc=utf8
(only if you are using vi or vim)
